Exclusive Shore Event: Juneau | Taste of Alaska's Wild Harvest
Discover the foragers, fisherfolk, and farmers behind Alaska's cuisine. Guided by the harvest, this truly seasonal tour may either start on the dock, where you'll meet the captain of a commercial fishing boat and peer in on the lifestyle of an Alaskan fishing family. Tour the living quarters and learn about sustainable salmon harvesting, and select fresh salmon from the onboard ice cooler to take to our cooking class. Or you may first meet with a local kelp or oyster farmer, or foraging expert to learn about how the landscape shapes the natural ingredients that flavor southeast Alaska's regional fare.
We'll transfer to the kitchen at Jorgenson House, a gorgeous inn owned by a fourth-generation family of Juneauites. Here, we'll discover how to cook with the whole salmon, showcasing recipes that fully-utilize every part of the fish. We'll enjoy lunch on the deck with stunning mountain views, with seafood as well as locally harvest greens, berries, and more. We'll meet with an Alaskan native cultural ambassador to understand the importance of the local harvest on our plate.
Note: In case of inclement weather, we will forgo the fishing boat visit and instead have a presentation at Jorgenson House on harvesting local ingredients including kelp, oysters, devil's club buds, fiddlehead ferns, and other products, and prepare a recipe to take home. We'll also have a tasting of products made with Alaska kelp. The tour will then proceed with the salmon cooking class and lunch.
